A great special occasion dish! For this recipe, you will need: 2 tablespoons olive oil, 1 tablespoon butter, 2 semi boneless quail, 1/2 cup chunky chutney, 6 small slices proscuitto, salt, pepper, brown sugar, 2 garlic cloves, 1 tablespoon shalltos, 1 medium carrot, 2 stalks chopped celery, bay leaves, rosemary, 1/2 cup chicken stock and 2 tablespoons dry vermouth.
